I got called in to instruct a Cook and Dine class for Cuisine and Chateau in Calgary’s Kensington Village. “Cuisine” is a great shop to teach from and learn in. Their is tons of room to work, beautiful equipment and an accompaniment of top notch service that provides a sweet balance between work and pleasure being hard at work it in the kitchen and receiving table side service at the group table.
The program was called “Girls, It’s your night”. As the women arrived, Melissa the hostess and I greeted our guests with a Wild Lingonberry Cosmopolitan. Refreshed and appetized, they set to work cooking up a Mediterranean feast.

Main Course- Individual Westcoast Bouillabaisse of Wild Halibut and Coho Salmon served Roasted Red Pepper Rouille
Dessert-Rhubarb, Pink Lady Apple and Wild Plum Charlotte with French Tarragon Custard Sauce
